Lamb steaks are good value and full of flavour and we have the best lamb in the world. Recently, I went on a working holiday to Bilbao, where I spent a week with Daniel Garcia in his Michelin-star restaurant, Zortziko. He has held his star for 25 years.
I had a very interesting time and was delighted to see him using our fabulous Irish lamb. There was also lots of chorizo used as antipasti there. I watched one of his chefs cook mussels, chorizo and barbecue sauce in a pot for a few minutes and it was simple and delicious.
