Afternoon tea – every second hotel has a version on their menu. There are more mini scones and cucumber sandwiches than we know what to do with.

However, there are a select few who are a cut above the rest and afternoon tea at the Shelbourne is a very special occasion.

That occasion has stepped up a notch recently as it’s taken an artistic turn with inspiration from Michael Flatley. We’re all familiar with the Lord of the Dance star and his dancing feet but in recent years he has taken his talent to the canvas, using the dexterity and precision of his footwork to create large-scale abstract paintings – and he is showcasing this art on the most delectable desserts.

It has to be seen to be appreciated and our favorite had to be the caramelised éclair filled with mango passion mousse and coconut ganache, with the golden and burnt orange colours of Flatley’s Grand National design jumping from the chocolate topping. The almond frangipane tartlet and pistachio pot crème with mixed berries is accompanied by the blue diamond of Nella Fantasia, which immediately catches your eye when the tower of plates are presented.

The vibrant pink of the strawberry is a dessert to remember, and save your appetite for Elvis – a salted caramel, raspberry compote and dark chocolate mousse encased in a dark chocolate glaze. Incredibly rich but powerful in its presentation.
